Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the sliced carrots, chopped pecans, maple syrup, olive oil, ground cinnamon, salt, and black pepper. Toss everything together until the carrots are evenly coated with the mixture.
Spread the carrot mixture in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for about 25-30 minutes, stirring halfway through to ensure even cooking, until the carrots are tender and slightly caramelized.
Once done, remove the baking sheet from the oven and let it cool for a few minutes.
Transfer the roasted carrots to a serving dish and garnish with freshly chopped parsley before serving.
