- Baked Feta Pasta

Ingredients
  

200g pasta (penne or fusilli)

200g feta cheese block

2 cups cherry tomatoes

3 cloves garlic, minced

1/4 cup extra-virgin olive oil

1 teaspoon dried oregano

1 teaspoon red chili flakes (optional)

Salt and pepper to taste

Fresh basil leaves, for garnish

Zest of 1 lemon

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large baking dish, combine cherry tomatoes, minced garlic, olive oil, oregano, chili flakes, salt, and pepper. Toss to coat the tomatoes well.

      Place the block of feta cheese in the center of the baking dish, surrounded by the tomato mixture.

        Drizzle a little extra olive oil over the feta and season it with a pinch of salt and pepper.

          Bake in the preheated oven for 25-30 minutes, or until the tomatoes burst and the feta is golden on top.

            While the feta and tomatoes are baking, boil the pasta according to package instructions until al dente. Drain and set aside.

              Once the feta and tomatoes are done, remove the baking dish from the oven. Using a fork, mash the feta and mix it with the burst tomatoes to create a creamy sauce.

                Add the cooked pasta to the baking dish and toss everything together until the pasta is well coated in the sauce.

                  Finish with lemon zest and toss gently.

                    Serve immediately, garnished with fresh basil leaves for an aromatic touch.
