4 medium zucchini, sliced into 1/4 inch rounds

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    In a large bowl, combine the grated Parmesan cheese, breadcrumbs, minced garlic, oregano, thyme, salt, and pepper. Mix well until everything is evenly distributed.

      Drizzle the olive oil over the sliced zucchini rounds, ensuring they are lightly coated. This helps the breadcrumb mixture stick and adds flavor.

        Dip each zucchini slice into the breadcrumb mixture, pressing down lightly to ensure they are fully coated.

          Arrange the coated zucchini slices in a single layer on the prepared baking sheet, making sure not to overcrowd them.

            Bake in the preheated oven for about 20-25 minutes, or until the zucchini is tender and the tops are golden and crispy.

              Once done, remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley before serving.
