In a mixing bowl, combine the shredded chicken with 1/4 cup of BBQ sauce, seasoning with a pinch of salt and pepper. Mix well to coat the chicken evenly.
Place the flatbreads or naan on a baking sheet. Brush the surface of each with olive oil to help them crisp up during baking.
Spread the remaining BBQ sauce evenly over the flatbreads, leaving a small border around the edges.
Distribute the BBQ chicken mixture evenly over the sauce on each flatbread.
Sprinkle the shredded mozzarella cheese generously on top of the chicken.
Add the thinly sliced red onion and corn kernels on top of the cheese for added texture and sweetness.
Bake the flatbreads in the preheated oven for about 12-15 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
Remove the flatbreads from the oven and let them cool for a few minutes.
Garnish with chopped cilantro before slicing into wedges to serve.
