In a mixing bowl, combine the soft breadcrumbs, grated Parmesan cheese, melted butter, olive oil, lemon zest, minced garlic, thyme, paprika, and a pinch of salt and pepper. Mix until the mixture is evenly moistened.
Place the cod fillets in a greased baking dish. Squeeze fresh lemon juice over each fillet, then season with salt and pepper.
Generously spoon the breadcrumb mixture over the top of each cod fillet, pressing down gently to ensure it adheres well.
Bake in the preheated oven for about 15-20 minutes, or until the cod is cooked through and the topping is golden and crispy.
Once done, remove from the oven and let rest for a few minutes. Garnish with fresh chopped parsley before serving.
