2 large russet potatoes, peeled and diced

4 large eggs

1/2 cup shredded cheddar cheese

1/4 cup green onions, chopped

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

4 large flour tortillas

1/2 cup salsa (optional for serving)

1 avocado, sliced (optional for serving)

Prepare the Potatoes: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced potatoes and season with salt, pepper, garlic powder, and paprika. Cook the potatoes, stirring occasionally, until they are golden brown and fork-tender (about 10-15 minutes). Set them aside.

    Scramble the Eggs: In a bowl, whisk the eggs together with a pinch of salt and pepper. In the same skillet (or a new one), reduce the heat to medium-low and pour in the eggs. Cook, stirring gently, until the eggs are soft and fluffy. This should take about 2-3 minutes. Remove from heat.

      Combine Ingredients: Add the cooked potatoes and chopped green onions into the skillet with the scrambled eggs. Mix everything together until well combined. Sprinkle the shredded cheddar cheese on top and let it melt slightly as you mix.

        Assemble the Burritos: Warm the flour tortillas in a dry skillet or microwave until pliable. Lay out each tortilla and spoon a generous amount of the potato and egg mixture into the center of each.

          Roll the Burritos: Fold in the sides of the tortilla, then roll it up from the bottom, tucking in the filling as you go, to create a neat burrito.
