Instructions
In a large mixing bowl, combine the rolled oats, milk, cooled coffee, Greek yogurt, maple syrup, vanilla extract, cinnamon, and a pinch of salt. Stir well until all ingredients are fully combined.
Divide the oat mixture evenly into two jars or containers with lids. Seal with a lid and refrigerate overnight (or for at least 4 hours) to allow the oats to soak and soften.
In the morning, give the oats a good stir. If the mixture is too thick, add a little more milk or coffee to achieve your desired consistency.
Drizzle caramel sauce generously over each serving of oats. If using, top with a dollop of fresh whipped cream.
For an extra touch, sprinkle chocolate shavings or a dusting of cocoa powder on top before serving.
Notes
Adjust the sweetness with more maple syrup if desired.
