Instructions
Caramelize the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook for about 15-20 minutes, stirring occasionally, until the onions are soft and golden brown. If they start to cook too quickly, reduce the heat to medium-low.
Add Flavor: Once the onions are caramelized, add the balsamic vinegar and thyme (if using). Stir to combine and cook for another 2-3 minutes, allowing the vinegar to reduce slightly. Remove from heat and set aside.
Prepare the Flatbread: Preheat the oven to 400°F (200°C). If using store-bought flatbread, place it on a baking sheet.
Assemble the Flatbread: Evenly spread the caramelized onions over the flatbread. Top with the shredded Gruyère cheese, spreading it out to cover the onions completely.
Bake: Place the flatbread in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread are golden.
Serve: Remove from the oven and let cool for a minute. Optionally, top with fresh arugula or herbs for a burst of color and flavor. Slice into portions and enjoy warm!
