200g udon noodles

3 tablespoons chili oil

2 garlic cloves, minced

1 tablespoon ginger, minced

2 spring onions, sliced

1 carrot, julienned

1 bell pepper, thinly sliced (any color)

2 tablespoons soy sauce

1 tablespoon sesame oil

Salt and pepper to taste

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Udon Noodles: In a large pot, bring water to a boil and add the udon noodles. Cook according to the package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a small bowl, mix the soy sauce, sesame oil, and half of the chili oil. Set aside.

      Sauté the Vegetables: In a large pan or wok, heat the remaining chili oil over medium heat. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant.

        Add the Vegetables: Toss in the spring onions, carrot, and bell pepper. Stir-fry for 3-5 minutes, until the vegetables are slightly tender but still vibrant.

          Combine Everything: Add the cooked udon noodles to the pan with the sautéed vegetables. Pour in the prepared sauce and toss everything together until the noodles are evenly coated and heated through, about 2-3 minutes. Season with salt and pepper to taste.

            Garnish and Serve: Remove from heat and transfer the noodles to serving plates. Garnish with sesame seeds and cilantro if using.
