honey or maple syrup

Instructions
In a mixing bowl, combine the rolled oats, ground flaxseed, and a pinch of salt. Stir to combine.
In another bowl, mix together the peanut butter, honey (or maple syrup), and vanilla extract until smooth.
Pour the peanut butter mixture into the dry ingredients and stir until everything is well combined.
Fold in the dark chocolate chips and any additional chopped nuts or seeds if using.
Once mixed, cover the bowl and refrigerate for about 30 minutes to firm up the mixture.
After chilling, use your hands to roll the mixture into small balls, about 1 inch in diameter.
Place the energy bites on a baking sheet lined with parchment paper.
Once all the mixture is rolled, refrigerate again for about 30 minutes to help them hold shape.
Store the energy bites in an airtight container in the fridge for up to a week and enjoy them as a quick snack.
Notes
Arrange the energy bites in a small bowl, garnished with a sprinkle of cocoa powder or crushed nuts for an elegant touch.
