Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and gently stir until just combined. It's okay if there are a few lumps—do not overmix.
Fold in the colorful sprinkles, ensuring they are evenly distributed throughout the batter.
Heat a non-stick skillet or griddle over medium heat and add a little butter or oil to coat the surface.
Pour 1/4 cup of pancake batter onto the skillet for each pancake. Cook until the edges appear set and bubbles form on the surface, about 2-3 minutes.
Flip the pancakes and cook for another 2-3 minutes until golden brown on the other side.
Repeat with remaining batter, adding more butter or oil to the skillet as needed.
Serve warm with maple syrup, whipped cream, and extra sprinkles for a festive touch!
