In a large mixing bowl, combine the rolled oats, almond flour, shredded coconut, and salt. Stir until well combined.
In another bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth.
Pour the wet mixture into the dry ingredients, and add the chocolate chips. If you're using chopped almonds, add them now as well.
Mix everything together using a spatula or your hands until the mixture is well combined and holds together.
Using your hands, scoop out tablespoon-sized portions of the mixture and roll them into balls. Place them on a parchment-lined baking sheet.
Once formed, refrigerate the energy bites for about 30 minutes to firm them up.
After chilling, transfer them to an airtight container. They can be kept in the fridge for up to a week or frozen for longer storage.
