Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the rolled oats, chopped almonds, chopped pecans, and shredded coconut. Mix well to combine.
In a separate bowl, whisk together the honey or maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt until smooth.
Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
Gently fold in the dried cranberries and dark chocolate chips.
Spread the granola mixture evenly onto the prepared baking sheet, pressing it down firmly with a spatula to form a compact layer.
Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown. Be sure to check and stir halfway through to ensure even baking.
Once baked, remove from the oven and allow it to cool completely on the baking sheet. This will help to create the clusters.
After cooling, break the granola into clusters and store them in an airtight container.
Notes
Serve in a glass jar or bowl, and enjoy with yogurt or milk. Garnish with extra cranberries and chocolate chips.
