2 ripe avocados

2 cups pasta (spaghetti or fettuccine works well)

2 cloves garlic, minced

1/4 cup fresh basil leaves, chopped

2 tablespoons lemon juice

1/4 cup Greek yogurt (or a vegan alternative)

Salt and pepper to taste

1 tablespoon olive oil

Cherry tomatoes, halved (for garnish)

Red pepper flakes (optional, for a spicy kick)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Avocado Sauce: In a food processor, combine the ripe avocados, minced garlic, chopped basil leaves, lemon juice, Greek yogurt, and olive oil. Blend until smooth and creamy. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.

      Season the Sauce: Taste the avocado sauce and season with salt and pepper to your liking. For an extra burst of flavor, add red pepper flakes if you enjoy some heat.

        Combine Pasta and Sauce: In a large mixing bowl, combine the cooked pasta with the creamy avocado sauce, tossing until the pasta is evenly coated. If needed, add more reserved pasta water to help the sauce stick to the pasta.

          Serve: Plate the pasta and top with halved cherry tomatoes for a pop of color. Garnish with additional basil leaves and a sprinkle of red pepper flakes if desired.
