green beans, chopped

zucchini, diced

vegetable broth

coconut milk

dried thyme

Instructions
Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
Add minced garlic and sauté for another 1-2 minutes until fragrant.
Stir in the diced carrots and celery; cook for an additional 5 minutes until slightly softened.
Add the diced potato, green beans, and zucchini to the pot; pour in the vegetable broth.
Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, or until all vegetables are tender.
Stir in the coconut milk, dried thyme, and dried basil. Simmer for another 5 minutes, allowing the flavors to blend.
Use an immersion blender to puree the soup until smooth (or blend in batches in a regular blender if necessary).
Season with salt and pepper to taste.
Serve hot, garnished with fresh parsley on top.

Use fresh vegetables for the best flavor.
