Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.
Stir in the minced garlic, diced carrot, and diced celery, and cook for an additional 2-3 minutes, until vegetables are tender.
Sprinkle in the dried thyme and mix well to combine.
Add the shredded chicken and pour in the chicken broth. Bring the mixture to a gentle boil.
Once boiling, add the orzo pasta and cook according to package instructions, usually about 8-10 minutes, stirring occasionally.
Reduce the heat to low, and stir in the heavy cream, lemon juice, and lemon zest. Mix until well combined and heated through.
Season with salt and pepper to taste. Allow the soup to simmer for another 5 minutes for the flavors to meld together.
Remove from heat and serve hot, garnished with fresh parsley on top.
Notes
Rotisserie chicken works great for this recipe.
