Instructions
Prepare the Breading: In a shallow bowl, combine flour, garlic powder, paprika, salt, and black pepper. In a separate bowl, place the beaten egg. In another bowl, add the panko breadcrumbs.
Bread the Salmon: Dredge each salmon cube in the flour mix, then dip it in the egg, and finally coat it with panko breadcrumbs, pressing lightly to adhere. Repeat for all salmon pieces.
Fry the Salmon Bites: In a large skillet, heat about 1/2 inch of oil over medium-high heat. Once hot, carefully add the salmon bites in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Make the Bang Bang Sauce: In a mixing bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lemon juice until smooth and well combined.
Serve: Plate the crispy salmon bites and drizzle or serve the Bang Bang sauce on the side for dipping. Garnish with sliced scallions for added freshness.
