Ingredients

4 chicken thighs (bone-in, skin-on)

1 cup buttermilk

1 tablespoon hot sauce (optional)

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (adjust to preference)

Vegetable oil (for frying)

Fresh herbs (for garnish, such as parsley or thyme)

Instructions

Marinate the Chicken: In a large bowl, whisk together buttermilk and hot sauce (if using). Add the chicken thighs, ensuring they are submerged. Cover and refrigerate for at least 2 hours, or overnight for the best flavor.

Prepare the Breading: In another bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper to create the seasoned flour mix.

Coat the Chicken: Remove the chicken from the marinade, allowing the excess buttermilk to drip off. Dredge each thigh in the seasoned flour mix, pressing lightly to ensure an even coating. Shake off the excess flour and set aside on a wire rack.

Heat the Oil: In a deep skillet or heavy-bottomed pot, heat about 2 inches of vegetable oil to 350°F (175°C). Use a thermometer to ensure the right temperature for frying.

Fry the Chicken: Carefully add the chicken thighs to the hot oil, skin-side down. Fry in batches if necessary, to avoid overcrowding, which can lower the oil temperature. Cook for about 12-15 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (74°C). Turn the chicken halfway through for even cooking.

Drain: Once cooked, transfer the fried chicken to a plate lined with paper towels to drain excess oil.

Garnish and Serve: Let the chicken rest for a few minutes, then garnish with freshly chopped herbs before serving.
