In a bowl, mix the grated zucchini with a pinch of salt and set it aside for about 10 minutes to release excess moisture. Afterward, squeeze the zucchini gently to remove some liquid.
In a medium mixing bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt until well combined. Set it aside.
In a large mixing bowl, combine the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk together until sugary and creamy.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
Fold in the grated zucchini, chocolate chips, and nuts (if using) until evenly distributed.
Pour the batter into the prepared loaf pan and spread it evenly with a spatula.
Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
Once baked, remove the bread from the oven and allow it to cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely.
