Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent (about 3-4 minutes).
Add the ground beef to the skillet, cooking until browned and fully cooked through (about 5-7 minutes). Drain excess fat if needed.
Stir in the cauliflower rice and chopped spinach, cooking for an additional 3-4 minutes until the spinach wilts.
In a separate bowl, combine heavy cream, garlic powder, Italian seasoning, salt, and pepper. Mix well.
Pour the cream mixture into the skillet with the beef and vegetable mixture. Stir to combine all ingredients thoroughly.
Transfer the mixture into a greased 9x13 inch (23x33 cm) casserole dish.
Sprinkle shredded cheddar cheese evenly over the top.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and slightly golden.
Remove from oven and let it sit for 5 minutes before serving to allow it to set.
