Instructions
In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
Add the chopped green onion whites and sauté for another 2 minutes, allowing the flavors to meld.
Pour in the chicken or vegetable broth, and bring to a simmer.
Once simmering, add the frozen potstickers gently into the pot. Let them cook according to package instructions, typically about 5-7 minutes.
During the last 3 minutes of cooking, add the chopped bok choy, sliced mushrooms, and julienned carrot to the pot. Stir to combine.
Season the soup with soy sauce, rice vinegar, chili paste (if using), and adjust salt and pepper to taste.
Once everything is heated through and the vegetables are tender, remove the pot from heat.
Serve hot, garnished with chopped green onion greens and fresh cilantro on top for an aromatic finish.
