Instructions
Prepare the Filling: In a bowl, mix together the cooked ground beef (or chicken), cooked rice, sour cream, salsa, and a pinch of salt and pepper. Combine well until uniform.
Assemble the Burrito: Lay one flour tortilla flat on a clean surface. Sprinkle half of the cheddar and mozzarella cheese on one half of the tortilla. Spoon half of the filling mixture over the cheese, then top with the remaining cheese. Fold the tortilla over the filling to create a half-moon shape, then tuck in the sides to fully encase the filling. Repeat with the second tortilla.
Grill the Burrito: Heat a skillet or grill pan over medium heat and add a tablespoon of butter. Once melted, place the burrito seam-side down in the pan. Grill for 3-4 minutes until golden brown and crispy.
Flip and Finish: Carefully flip the burrito and grill the other side for another 3-4 minutes, allowing the cheese to melt and the tortilla to turn crispy.
Serve: Remove the burritos from the pan, let them sit for a minute, then slice them in half diagonally. Serve with extra salsa and jalapeños, if desired.
