Heat the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
Increase the heat to medium-high and add the ground turkey to the skillet. Cook, breaking it apart with a wooden spoon, until it’s browned and cooked through, about 5-7 minutes.
Stir in the diced bell peppers and continue to cook for another 4-5 minutes until the peppers are tender but still vibrant.
Add the smoked paprika, cumin, oregano, salt, and pepper to the mixture. Stir well to evenly distribute the spices.
Toss in the black beans and corn, mixing everything together. Allow it to cook for an additional 3-4 minutes until heated through.
Taste and adjust seasoning if necessary. Remove from heat.
Serve the skillet mixture hot, garnished with fresh cilantro and lime wedges on the side for an extra burst of flavor.
