4 boneless, skinless chicken breasts

1 cup fresh mushrooms, finely chopped (cremini or button)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup fresh spinach, chopped

½ cup ricotta cheese

½ cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Stuffing: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and garlic, and sauté for 2-3 minutes until the onion is translucent.

      Add the Mushrooms and Spinach: Stir in the chopped mushrooms and cook for another 5 minutes until they soften. Then add the chopped spinach and cook until wilted. Remove from heat and let cool slightly.

        Mix the Filling: In a mixing bowl, combine the sautéed mushroom mixture, ricotta cheese, grated Parmesan cheese, oregano, thyme, and season with salt and pepper. Mix well until fully incorporated.

          Prepare the Chicken: Using a sharp knife, slice each chicken breast horizontally to create a pocket (be careful not to cut all the way through).

            Stuff the Chicken: Generously fill each chicken pocket with the mushroom and cheese mixture. Secure the openings with toothpicks if necessary.

              Bake the Chicken: Place the stuffed chicken breasts in a baking dish. Season the tops with a little more salt, pepper, and a sprinkle of Parmesan cheese. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

                Rest and Serve: Let the chicken rest for 5 minutes before slicing. Garnish with freshly chopped parsley before serving.
