package (9 ounces)
cheese tortellini

fresh spinach

Instructions
In a large pot, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon, about 5-7 minutes.
Add the diced onion, carrots, and celery to the pot. Sauté for another 5-7 minutes until the vegetables have softened.
Stir in the minced garlic and cook for an additional minute until fragrant.
Pour in the chicken broth and add the can of diced tomatoes (with juices), basil, oregano, and season with salt and pepper. Bring to a simmer.
Let the soup simmer for about 10 minutes to develop flavors.
Add the tortellini and cook according to the package instructions, usually about 3-5 minutes.
In the last minute of cooking, stir in the fresh spinach until wilted.
Taste and adjust seasoning if needed before serving.
Notes
Serve with crusty bread and top with grated Parmesan cheese.
