Ingredients

2 lb beef tenderloin roast

1/2 cup unsalted butter, softened

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons fresh parsley, chopped

Salt and black pepper to taste

2 tablespoons olive oil

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 teaspoon smoked paprika

Instructions

Preheat your oven to 425°F (220°C).

Prepare the herb butter: In a medium bowl, mix the softened butter with minced garlic, rosemary, thyme, parsley, salt, pepper, and smoked paprika until well combined.

Season the beef: Pat the beef tenderloin dry with paper towels. Rub it with olive oil, Dijon mustard, lemon juice, salt, and pepper.

Apply the herb butter: Generously smear a thick layer of the prepared herb butter all over the tenderloin, ensuring it's well coated and creating a flavorful crust.

Searing the roast: In a large oven-safe skillet, heat some olive oil over medium-high heat. Once hot, sear the beef tenderloin for about 2-3 minutes on each side until browned.

Roasting: Transfer the skillet to the preheated oven. Roast the tenderloin for about 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare. Adjust timing according to your desired doneness (130°F for rare, 145°F for medium).

Rest the beef: Remove the skillet from the oven and let the roast rest for at least 10-15 minutes before slicing. This allows the juices to redistribute for a tender and juicy roast.

Slice and serve: Slice the tenderloin into 1-inch thick medallions and serve with the remaining herb butter melted on top for extra flavor.
