Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine the diced sweet potatoes and sliced sausage.
In a separate small bowl, whisk together the honey, minced garlic, olive oil, smoked paprika, cayenne pepper (if using), salt, and pepper until well combined.
Pour the honey garlic mixture over the sweet potato and sausage mixture, and toss well to ensure everything is evenly coated.
Spread the mixture out in a single layer on the baking sheet, ensuring good airflow for the sweet potatoes to roast properly.
Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and slightly caramelized, and the sausage is heated through.
Once done, remove from the oven and let cool for a couple of minutes.
Before serving, sprinkle chopped parsley over the top for a fresh touch.
