Begin by marinating the chicken. In a medium bowl, combine the olive oil, lemon zest, lemon juice, black pepper, garlic powder, onion powder, and salt. Whisk until well blended.
Place the chicken breasts in a large resealable plastic bag or a shallow dish and pour the marinade over the chicken. Ensure all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 4 hours for enhanced flavor).
Preheat your grill or grill pan over medium heat. Remove the chicken from the marinade, allowing any excess to drip off.
Place the prepared chicken breasts on the grill and cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
Once fully cooked, transfer the chicken to a plate and let it rest for about 5 minutes. This helps to retain the juices.
Slice the chicken and garnish with freshly chopped parsley before serving.
