In a baking dish, combine the halved cherry tomatoes, diced bell pepper, and minced garlic. Drizzle with olive oil, then sprinkle with oregano, salt, and black pepper. Toss to combine.
Make a small well in the center of the vegetable mixture and place the block of feta cheese in the well. Drizzle a little more olive oil over the feta.
Bake in the preheated oven for 20 minutes, or until the feta is soft and slightly golden.
Remove the baking dish from the oven, and carefully crack the eggs over the feta and vegetables.
Return to the oven and bake for an additional 10-12 minutes, or until the eggs are cooked to your desired doneness (whites set and yolks soft).
Remove from the oven and garnish with chopped fresh parsley.
Serve immediately with crusty bread or pita for dipping.
