In a large mixing bowl, combine the chicken pieces with olive oil, oregano, basil, paprika, salt, and pepper. Toss well until the chicken is evenly coated.
In a greased 9x13 baking dish, layer the sliced zucchinis, followed by the grilled chicken mixture, red bell pepper, and onion.
Sprinkle the minced garlic over the entire dish, followed by the halved cherry tomatoes.
Evenly distribute the crumbled feta cheese and sliced olives on top.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
Once done, remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
