- Mediterranean Chickpea Salad

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 bell pepper (red or yellow), diced

1/2 cup Kalamata olives, pitted and halved

1/3 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

Juice of 1 lemon

3 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

In a large mixing bowl, combine the rinsed chickpeas, halved cherry tomatoes, diced cucumber, chopped red onion, and diced bell pepper.

    Add the Kalamata olives, crumbled feta cheese, and chopped parsley to the bowl.

      In a separate small bowl, whisk together the lemon juice, olive oil, dried oregano, salt, and pepper until well combined.

        Pour the dressing over the salad and gently toss everything together until well coated.

          Allow the salad to sit for at least 15 minutes at room temperature to let the flavors meld together before serving.
