Oreo cookies, coarsely chopped (for mixing)

Instructions
In a medium bowl, combine the crushed Oreo cookies and melted butter. Mix until the crumbs are fully coated.
Press the Oreo mixture evenly into the bottom of a lined 9x9 inch baking dish to form a crust. Set aside.
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
Gradually add in the powdered sugar and vanilla extract, mixing until fully combined and creamy.
In another bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until well combined.
Stir in the coarsely chopped Oreo cookies into the mixture.
Pour the cheesecake mixture over the crust and spread evenly with a spatula.
Crumble additional Oreo cookies on top for decoration.
Cover and refrigerate for at least 4 hours or until set.
Once chilled, cut into bars and serve.
Notes
Serve in individual slices on dessert plates, garnished with chocolate shavings or drizzled chocolate sauce for an extra touch!
