4cupsfresh peaches, sliced (or 2 cans of sliced peaches, drained)
1cupgranulated sugar
1teaspoonground cinnamon
1cupself-rising flour
1cupwhole milk
1/2cupunsalted butter, melted
1teaspoonvanilla extract
optionalice cream or whipped cream for serving
Instructions
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the sliced peaches with 1/4 cup of granulated sugar and 1/2 teaspoon of cinnamon. Toss to coat the peaches evenly and then spread them in an even layer at the bottom of a greased 9x13-inch baking dish.
In another bowl, whisk together the self-rising flour, remaining sugar (3/4 cup), and ground cinnamon.
Add the whole milk, melted butter, and vanilla extract to the dry ingredients, stirring until just combined. The batter will be slightly lumpy, which is okay.
Pour the batter evenly over the layer of peaches in the baking dish. Do not mix it in; just let it float on top.
Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and let it cool for about 10 minutes before serving.
Notes
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream on the side. You can sprinkle a bit of cinnamon on top for an extra touch!
