Ingredients

2 cups raw almonds

2 tablespoons coconut oil (melted)

1 tablespoon maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon ground allspice

1/4 teaspoon sea salt

1 tablespoon brown sugar (optional for extra sweetness)

Instructions

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large mixing bowl, combine the melted coconut oil, maple syrup, and vanilla extract. Stir until well mixed.

Add the raw almonds to the bowl and toss them in the coconut oil mixture until they are evenly coated.

In a small bowl, mix together the ground cinnamon, ginger, nutmeg, allspice, and sea salt. If you prefer a sweeter taste, add the brown sugar as well.

Sprinkle the spice mixture over the coated almonds, and toss everything together until the almonds are thoroughly coated with the spices.

Spread the spiced almonds in a single layer on the prepared baking sheet.

Bake in the preheated oven for 10-12 minutes, stirring halfway through to ensure even roasting, until the almonds are golden brown and fragrant.

Once done, remove the baking sheet from the oven and let the almonds cool completely. The coating will harden as they cool.

Store the cooled Pumpkin Pie Spiced Almonds in an airtight container for up to two weeks.
