Begin by preparing all your ingredients: peel and chop the cucumber, core and chop the green apple, and juice the lemon.
In a blender, add the chopped cucumber, kale leaves, green apple, lemon juice, grated ginger, coconut water, and a pinch of sea salt.
Blend on high until smooth, ensuring there are no chunks remaining in the juice. If the mixture is too thick, you can add more coconut water to reach your desired consistency.
Once blended, strain the juice through a fine mesh sieve or cheesecloth into a large bowl or pitcher, pressing gently to extract all the liquid.
Taste and adjust with more lemon juice or salt if necessary.
Transfer the juice into glasses and serve immediately over ice, if desired.
