Take a skewer and thread a piece of watermelon onto it, followed by a leaf of mint and a piece of feta cheese.
Continue threading these ingredients onto the skewer, alternating between watermelon, mint, and feta until the skewer is filled (about 3-4 repetitions per skewer).
Repeat this for all skewers until all ingredients are used up.
In a small bowl, whisk together the balsamic glaze and olive oil to create a dressing. Season with a pinch of salt and pepper to taste.

Notes
Serve the skewers on a long rectangular platter with extra mint leaves scattered around for a pop of color. You can also drizzle some extra balsamic glaze over the top before serving.
