8 large ripe tomatoes, halved

1 whole bulb of garlic, top sliced off

1 medium onion, chopped

3 tablespoons olive oil

2 cups vegetable broth

1 teaspoon dried basil

1 teaspoon sugar (optional, to balance acidity)

Salt and pepper, to taste

Fresh basil leaves, for garnish

½ cup heavy cream (optional, for creaminess)

Preheat your oven to 400°F (200°C).

    On a large baking tray, arrange the halved tomatoes cut side up. Drizzle with 2 tablespoons of olive oil and sprinkle with salt and pepper.

      Place the whole bulb of garlic (cut side up) on the tray alongside the tomatoes.

        Roast in the oven for about 30-35 minutes, or until the tomatoes are caramelized and the garlic is soft and golden.

          In a large pot, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes.

            Once the tomatoes and garlic are done roasting, remove them from the oven and add them to the pot with the onions.

              Pour in the vegetable broth, add dried basil, and sugar (if using). Bring the mixture to a simmer and let it cook for 10 minutes, allowing the flavors to meld together.

                Carefully blend the soup using an immersion blender until smooth, or transfer it in batches to a regular blender (be cautious of hot liquid).

                  If you prefer a creamier soup, stir in the heavy cream and heat through for another 2-3 minutes. Adjust seasoning with salt and pepper as needed.

                    Serve the soup hot, garnished with fresh basil leaves.
