3 large yellow onions, thinly sliced

4 cloves garlic, minced

4 cups beef broth

2 tablespoons soy sauce

2 tablespoons balsamic vinegar

1 tablespoon Worcestershire sauce

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 325°F (165°C).

    Sear the Roast: In a large Dutch oven, heat the olive oil over medium-high heat. Season the chuck roast with salt and pepper. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove the roast and set aside.

      Sauté Onions: In the same pot, add the sliced onions and cook for about 10-12 minutes, stirring occasionally, until they caramelize and turn golden brown. Add minced garlic and sauté for an additional 1-2 minutes until fragrant.

        Deglaze the Pot: Pour in the beef broth, scraping the bottom to loosen any brown bits. Mix in the soy sauce, balsamic vinegar, and Worcestershire sauce.

          Add Herbs and Roast: Return the roast to the pot and add thyme, rosemary, and bay leaf. Ensure the liquid covers at least half of the roast.

            Slow Cook: Cover the (Dutch oven) with a lid and transfer to the preheated oven. Cook for 3 to 4 hours, or until the roast is fork-tender.
