Begin by seasoning the steak cubes with salt and pepper. Make sure each piece is evenly coated.
In a large skillet, heat the olive oil over medium-high heat until hot.
Add the seasoned steak bites in a single layer, ensuring not to overcrowd the pan. Sear for about 2-3 minutes on each side until browned and cooked to your desired doneness (medium rare is ideal).
Once cooked, remove the steak bites from the skillet and set them aside on a plate.
In the same skillet, reduce the heat to medium and add the unsalted butter. Allow it to melt completely.
Stir in the minced garlic, rosemary, and thyme. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
Return the steak bites to the skillet and toss them in the garlic butter mixture until well-coated and heated through, about another minute.
Remove from heat, and taste to adjust seasoning if necessary.
Transfer the steak bites to a serving dish and garnish with freshly chopped parsley.
