Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper for easy cleanup.
In a small bowl, whisk together honey, minced garlic, soy sauce, grated ginger, olive oil, salt, and pepper to create the honey garlic sauce.
Place the salmon fillets on one side of the prepared sheet pan. Brush each fillet generously with the honey garlic sauce. Reserve some sauce for drizzling later.
On the other side of the sheet pan, arrange the broccoli florets and sliced red bell pepper. Drizzle them with olive oil, and season with salt and pepper. Toss to coat evenly.
Bake in the preheated oven for about 15-18 minutes, or until the salmon is cooked through (internal temperature should reach 145°F or 63°C) and the vegetables are tender and slightly caramelized.
Halfway through, brush the salmon with more of the reserved honey garlic sauce for extra flavor.
Once done, remove from the oven and sprinkle sesame seeds over the salmon and vegetables, if using.
Garnish with fresh parsley or cilantro before serving. Drizzle any remaining honey garlic sauce over everything for added deliciousness.

For a gluten-free option, use tamari instead of soy sauce.
