4 bone-in pork chops (about 1-inch thick)

Salt and freshly ground black pepper, to taste

1 teaspoon smoked paprika

2 tablespoons olive oil

1 large onion, thinly sliced

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

2 tablespoons Dijon mustard

1 teaspoon Worcestershire sauce

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Fresh parsley, chopped (for garnish)

Season the Pork Chops: Pat the pork chops dry with paper towels. Season both sides generously with salt, black pepper, and smoked paprika.

    Sear the Pork Chops: In a large skillet over medium-high heat, heat the olive oil. Once hot, add the pork chops and sear for about 4-5 minutes on each side until they are golden brown. Remove the chops from the skillet and set aside on a plate.

      Cook the Onions and Garlic: In the same skillet, add the sliced onions. Cook them over medium heat until they become translucent and begin to caramelize, approximately 8-10 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

        Make the Sauce: Pour in the chicken broth while scraping the bottom of the skillet to release any browned bits. Bring it to a simmer, then stir in the heavy cream, Dijon mustard, Worcestershire sauce, and thyme. Season with additional salt and pepper if needed.

          Return Pork Chops: Return the pork chops to the skillet, nestling them in the sauce. Cover the skillet, reduce heat to low, and let the chops simmer in the sauce for about 15-20 minutes, or until they are cooked through (internal temperature should reach 145°F).

            Thicken the Sauce (Optional): If you prefer a thicker sauce, stir in the cornstarch mixture and allow it to simmer for an additional 2-3 minutes until the sauce has thickened.
