Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, combine the sweet potato rounds, olive oil, maple syrup, cinnamon, smoked paprika, cayenne pepper, salt, and pepper. Toss well to ensure all rounds are evenly coated.
Spread the sweet potato rounds in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
Roast in the preheated oven for 25-30 minutes, flipping the rounds halfway through, until they are golden brown and tender.
Once roasted, remove from the oven and let them cool slightly. Taste and adjust seasoning if necessary.
Serve warm, garnished with freshly chopped cilantro or parsley for a burst of freshness.
