2 cups frozen hash browns, thawed

1 cup shredded mozzarella cheese

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

4 large eggs

1 cup whole milk

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

Fresh herbs (such as basil or parsley) for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large bowl, combine the thawed hash browns, shredded mozzarella cheese, olive oil, and a pinch of salt and pepper. Mix until well combined.

      Press the hash brown mixture evenly into the bottom and up the sides of a greased 9-inch pie dish to form a crust. Bake in the preheated oven for about 20 minutes or until golden and crisp.

        While the crust is baking, in another mixing bowl, whisk together the eggs, whole milk, garlic powder, onion powder, and additional salt and pepper until well combined.

          Remove the hash brown crust from the oven and layer the chopped spinach and halved cherry tomatoes evenly over the crust.

            Pour the egg mixture over the vegetables, spreading it gently to ensure even distribution.

              Return the quiche to the oven and bake for an additional 25-30 minutes, or until the egg is set and lightly golden on top.

                Allow the quiche to cool for a few minutes before slicing. Garnish with fresh herbs before serving.
