soft white bread

Instructions
Boil the eggs in a pot of water for about 9-10 minutes. Once cooked, place them in an ice bath for 5 minutes to stop the cooking process.
Peel the eggs and then mash them in a bowl with a fork until you reach a creamy consistency.
Add the mayonnaise, soy sauce, mirin (if using), and season with salt and pepper to taste. Mix until well combined.
If you like a bit of tang, spread a thin layer of mustard on one side of each slice of bread.
Divide the egg mixture evenly between two slices of bread, then top with the remaining two slices to create sandwiches.
Carefully slice off the crusts from the sandwiches to create a neat finish (optional).
Cut each sandwich into halves or quarters, depending on your preference.
Garnish with finely chopped chives on the top for a pop of color and flavor.
Notes
Use Japanese mayonnaise for the best flavor.
