1 lb baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon lemon zest

3 tablespoons fresh lemon juice

1 teaspoon honey (or maple syrup for vegan option)

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, honey, dried thyme, salt, and pepper. Whisk together until well mixed.

      Add the baby carrots to the bowl and toss them in the lemon garlic mixture until they are evenly coated.

        Spread the coated carrots onto a baking sheet in a single layer. Make sure they are not overcrowded for even roasting.

          Roast the carrots in the preheated oven for 25-30 minutes, turning them halfway through the cooking time, until they are tender and slightly caramelized.

            Once done, remove from the oven and let them cool slightly before transferring to a serving dish.

              Garnish with freshly chopped parsley for an added pop of color and flavor.
