In a large bowl, whisk together olive oil, minced garlic, lemon juice, lemon zest, smoked paprika, red pepper flakes, salt, and black pepper.
Add the shrimp to the bowl and toss until well-coated in the marinade. Set aside for about 10 minutes to allow the flavors to meld.
On a large sheet pan, arrange the halved cherry tomatoes, red onion slices, and red bell pepper slices in an even layer. Drizzle with a little olive oil and toss with salt and pepper.
Spread the marinated shrimp over the vegetables on the sheet pan, making sure they're in a single layer for even cooking.
Bake in the preheated oven for about 10-12 minutes, or until the shrimp are pink and opaque, stirring halfway through to ensure even cooking.
Once done, remove from the oven and garnish with fresh chopped parsley. Serve immediately.
